Chipotle ain’t got nothin’ on this salsa!
Chris is a Chipotle fanatic which is good for me because Chipotle uses all clean meats and organic produce where possible. So it’s as clean as I could make it at home! This is great for the person working to heal inflammation, heal their gut, and overcome other digestive and autoimmune issues.
So if you love Chipotle but don’t want to eat out every meal, do what Chris does and make Chipotle bowls at home! Get started with this clean salsa!

1.You HAVE TO use ORGANIC EVERYTHING or this salsa because it tastes WAY better.
2. You will grill some of the veggies whole before you begin.
3. When you are chopping the veggies in the food processor, you will chop them separately. In other words, do not put all the veggies in the food processor together and chop. The consistency will not be right.
4. This salsa will keep in the refrigerator for 1-1.5 weeks and is an excellent way to get more veggies into your diet.

Turn on grill to high heat.
Keeping them whole, sear the tomatoes and the 1/2 onion. (Do NOT slice the veggies.) Sear until they have grill marks.
In food processor, chop all the vegetables separately. Begin with the onion. Use the blade attachment (the knife looking attachment that sits at the bottom). Chop the onion until it looks like it's twice the size of a grain of rice. Pour the chopped onion out of the food processor and into a large metal bowl.
Next cut the tomatoes in half. Leave ONE half out and set it to the side. Then in the food processor, blend the remaining tomatoes with the blade attachment until it looks like a chunky soup. Add the chopped tomatoes to the large bowl with the chopped onion.
Next, process the jalapeño peppers, garlic, and 1/2 of one tomato until it is a fine puree. When finished, pour it into the large bowl with the onion and tomatoes.
Next, chop the cilantro finely with the food processor or a knife. Then add it to the bowl.
Juice the 2 limes into the bowl. Then add 2 tsp sea salt to taste. Now, mix everything together in the bowl. Store in a glass mason jar and enjoy all week!
