Easy Cauliflower Rice
This is a staple. Chris eats brown rice. I eat this every week instead of grains. Both are healthy anti-inflammatory options depending on what your body and health goals.

Prep
  1. Chop onion, celery, and cauliflower SEPARATELY in food processor.
Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Sauté onion for 8 minutes, until soft.
  3. Add celery to skillet and sauté 5 minutes more.
  4. Meanwhile, place cauliflower in a food processor with the “S” blade and process until the texture of rice.
  5. Add cauliflower to skillet, cover and cook 5-10 minutes, until soft, then add salt to taste.
  6. Store in a container in the fridge and enjoy with your pre-prepped meals all week long.
